Bridgestone extreme wet tyres displaced 61 litres per second at 300 kp/h and had a working temperature of 65 degrees Celsius
These stats maybe controlled by the FIA
I do know that the extremes are designed of work in up to 5 mm of standing water and the Pirelli's have a denser outer tread (Bridgestone didn't have this) pattern to force the water out and away from the car and not under it, and so should be better than the Bridgestones.
